It has come to the attention of the Cookbook Committee that there are some corrections that need to be made in the Cookbook. Corrections are listed below:
Page 56: Grand Champion Focaccia
Remove the 2 cups flour and 1/4 cup oil at the bottom of the right column
Page 57: Toffee Chip Coffee Cake
Pan size should be 9×13 (not jelly roll)
Page 147: Old Fashioned Onion Soup
Instructions should read “stir the butter to coat the onions”
Page 157:
The best part of the Boston Jell-O Salad is the custard topping. Follow recipe as in book and cover with saran. Then, cook 1 cup pineapple juice, 1?2 cup sugar, 2 T flour, 2 T butter and 1 well beaten egg till it thickens. Cool well and fold in small tub of cool whip. Stir well and spread over jell-o.
Page 187: Enchilada Casserole
Do not add flour and water until after the sauce simmers, to thicken it before layering.
There’s more than that. One recipe calls for one thing up top but another in the description.
Another (enchilada I think) doesn’t tell you what temp or how long to bake. I wanted to make this one but it seemed to be missing info.
I’d have to go back and look to find them.
Thanks for noticing the corrections. If you can find the recipe title and page number, we can track down the appropriate corrections. Just leave a comment on this page.
I found the recipes but will have to go back & look up the number. They’re in the same spread – one is Bill’s Enchilladas – doesn’t say what temp or how long to bake. The other is a dish that doesn’t have celery in the ingredients but tells you to brown the hamburger and celery – would like to know how much celery. I’ll get back to you with the page numbers and titles. Thanks!
More corrections to the Cookbook:
Page 40: Yule Bread
Makes 5 loaves or divide in fourths and place in pie pans. Bake 35 – 40 minutes or until done.
Page 239: Tri Level Bars
At the end of the instructions it should say “frost with your favorite chocolate frosting”
Pg. 90 – Bill’s Chicken Enchilladas – Bake at what temp for how long?
Pg. 91 – Cheddar Chicken – calls for celery in the instructions but it’s not listed in the ingredients.
Pg. 72 – Hotdish in Cast Iron Frypan. – how much cream?

I am still trying to get ahold of the information for Hot Dish in cast Iron Fry Pan but the gal is gone.

Page 82: Rice Hotdish
Cook 1 cup rice, let stand while cooking the meat mixture. Brown hamburger; add 2 cups sliced celery and 2 large onions. Let simmer for 5 minutes and add 1/4 cup soy sauce, 1 can mushroom soup and 1 soup can water that has been mixed together. Add to rice. Cover and bake at 350 for 1-1/2 hours, stirring after the first 1/2 hour; uncover towards end of baking.
Page 311: Dill Pickles
Instead of 1/2 cup white sugar, it should be 1/2 cup white vinegar
we have found a couple more corrections, both on page 227. Excellent Orange Bars should just be an 11×17 pan NOT a 9×13 pan. Also you do not “bake until done” after making the frosting. The Granola bars are a 9×9 baking pan.
Ginger Creams on page 202 should have about 1 Tbsp cream in the quick cream frosting. (enough to make a spreadable frosting)
